Chicken in Lemon Sauce

Chicken in Lemon Sauce (Mediterranean Cuisine p68)


  • 1 Kg Chicken Drumsticks
  • 2 Onions (chopped)
  • 1-2 tbs Oil (or salted pork fat)
  • 1 Cup Blanched Almonds
  • 2 Cups of Chicken Stock
  • 1 tsp Ground Ginger
  • Ground Pepper
  • Salt
  • tsp of Pure Saffron (infused in cup hot stock)
  • Juice 1-1 Lemons


  1. Lightly Fry onion until soft in shallow pan (do not allow to colour)
  2. Add chicken and seal on all sides without colouring
  3. Place Almonds and hot stock in a food processor for about 2 minutes
  4. Using a coarse sieve strain this almond milk over the chicken (should be a consistency of thin cream)
  5. Add ground ginger and saffron steeped in stock, together with a good grinding of pepper
  6. Cover and simmer for 30 minutes.
  7. Remove the lid and increase the heat to boil the sauce down to a thick creamy consistency.
  8. Add the juice of 1 lemon - more to taste.
