Honey & Saffron Quiche

HONEY & SAFFRON QUICHE (700 YEARS OF ENGLISH COOKERY P 51)

Ingredients:

  • 2 cups thick cream
  • 1/8 tspn Saffron
  • 1 cup Milk
  • 3 eggs plus 2 extra yolks
  • 1 cup Honey
  • Pastry Shell

Method:

  1. Heat the cream, saffron and milk together until cooked
  2. Beat eggs and yolks with honey in a bowl
  3. Slowly add the hot liquid beating constantly with a wire whisk
  4. Pour into cooled shell and bake at 350F for 25-30 minutes until set.
