Spinach with Pancetta & Currants

SPINACH WITH PANCETTA & CURRANTS (MEDITERRANEAN CUISINE P128)

Ingredients:

  • 1 kg Spinach
  • 2 tbspns Currants
  • 60g Pancetta

Method:

  1. Soak currants for approx 5 minutes in hot water & roughly chop pancetta
  2. Wash spinach and trim stalks
  3. Cook spinach without any additional water, turning occasionally for about 2-3 minutes after it begins to steam.
  4. Drain, cool and squeeze spinach dry
  5. In an oiled pan fry pancetta until fat runs. Add spinach and currants to pan and toss until heated through and serve.
