Spinach with Pancetta & Currants
SPINACH WITH PANCETTA & CURRANTS (MEDITERRANEAN CUISINE P128)
Ingredients:
- 1 kg Spinach
- 2 tbspns Currants
- 60g Pancetta
Method:
- Soak currants for approx 5 minutes in hot water & roughly chop pancetta
- Wash spinach and trim stalks
- Cook spinach without any additional water, turning occasionally for about 2-3 minutes after it begins to steam.
- Drain, cool and squeeze spinach dry
- In an oiled pan fry pancetta until fat runs. Add spinach and currants to pan and toss until heated through and serve.
