Squid with almonds pine nuts and currants

Squid with almonds, pine nuts and currants (Mediterranean Cuisine p98)

Ingredients:

  • 700g Small Squid
  • 1-2 tbsp Olive Oil
  • 1 tbsp Slivered Almonds
  • 1-2 tbsp Pine Nuts
  • 1 tbsp Currants
  • Salt and Ground Pepper
  • Dash of Wine Vinegar

Method:

  1. Cut squid into thin rings
  2. Heat a little of the oil in a frying pan or wok and toss almonds and pine nuts over gentle heat
  3. Remove from pan and set aside.
  4. Add remaining oil, heat and add squid
  5. Cook over fairly high heat for 3-4 minutes, tossing squid to cook evenly
  6. Add almonds, pine nuts and currants
  7. Season with pepper and salt and add a good dash of wine vinegar
  8. Toss to mix and serve immediately
